Mashed Sweet Potatoes with Chipotle Cream

5 medium sweet potatoes
1 cup heavy cream
1 large chipotle -- en adobo, undrained
to taste salt
Directions:
Use an electric roaster or something else with enough room for about 6 gallons of stew.
Pour in about a cup of vegetable oil and get it almost smoking hot before you start.
1 - brown the meat very well (this will take at least 30 minutes, done in batches in very hot oil)
2 - add potatoes and carrots and cook 10 minutes
3 - add onions, garlic, and bell peppers, stir well, cook 5 minutes
4 - add chiles, tomatoes, broth, and beer; cook til meat is done - at least 2 hours.
5 - add enchilada sauce, flour, and masa, and cook til thickened
6 - add lemon juice and salt to taste
Serve with fry bread if you can, or flour tortillas.
Notes:
This recipe produces a slightly-sweet, slightly-smoky rich side dish
that goes well with roasted or grilled or grilled meats.
Chipotles en adobo are available in a small can in many supermarkets.
