BentFest Green Chile Stew

Recipe By : Grootna Serving Size : 50 Preparation Time : 3:30 Categories : Main Dish Green Chili Mexican Stew Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup vegetable oil -- for browning the meat 10 lb boneless pork stew meat (wild boar is good) -- cubed 3/4" 5 lb white or yellow potatoes -- cubed 3/4" 2 lb carrots -- cut 3/4" lengths, big pieces halved 2 large yellow onions -- cubed 3/4" 5 lb Hatch or other green chiles -- roasted, seeded, peeled, diced 1/4" 5 cloves garlic -- minced 2 large red bell peppers -- 1/2" diamonds 1 28-oz can Rotel tomatoes (or generic) 2 quarts chicken broth 1 quart green chile liqueur (from cleaning the green chiles) 1 16-oz can beer 1 28-oz can green enchilada sauce 1/4 cup flour 1/4 cup masa 2 lemons juice only to taste salt Directions: Use an electric roaster or something else with enough room for about 6 gallons of stew. Pour in about a cup of vegetable oil and get it almost smoking hot before you start. 1 - brown the meat very well (this will take at least 30 minutes, done in batches in very hot oil) 2 - add potatoes and carrots and cook 10 minutes 3 - add onions, garlic, and bell peppers, stir well, cook 5 minutes 4 - add chiles, tomatoes, broth, and beer; cook til meat is done - at least 2 hours. 5 - add enchilada sauce, flour, and masa, and cook til thickened 6 - add lemon juice and salt to taste Serve with fry bread if you can, or flour tortillas.
